| Chicken Tizza Pizza Serves: 6 Prep. Time: 20 minutes Prep. Method: Bake ![]() Ingredients: Pizza base 1 large size Chicken tikka, boneless small cubes 1/4 kg Capsicum, finely chopped 1 large Spring onion, finely chopped 2 Pizza cheese, grated 1 1/2 cup Cheddar cheese, grated 1/2 cup Chilli cheese, grated 1/2 cup Butter as required Pizza sauce: Tomatoes 6 medium Basil leaves 6 fresh, or 1/4 tsp dried Green chillies 4 Garlic cloves 6 Chilli powder 1/2 tsp Tomato ketchup 2 tbsp Chilli garlic sauce 3 tbsp Oregano 1/4 tsp Butter 1 1/2 tbsp Salt to taste Directions: 1. Pizza sauce: Grind tomatoes, garlic, green chillies and basil leaves in a mixer grinder. In a saucepan, heat butter and fry oregano on low heat. Add tomato puree mixture, chilli sauce and ketchup. Mix well on high heat till it boils. Cover the pan and let it simmer on low heat, till tomato puree becomes thick and butter separates from the sauce. Remove from heat. In a separate bowl mix the cheese together and keep aside. 2. Apply a little butter to the pizza base, then spread pizza sauce, chicken, vegetables and finally spread the cheese mixture and finish with little butter on top. | Bread Pizza Serves: 6 Prep. Time: 15 minutes ![]() Ingredients: 4 slices bread 4 slices cheese slices 1 - capsicum 8-10 - olives 8 tablespoons Ketchup 1 cup chicken cooked 1/2 teaspoon oregano - - black pepper 2 tablespoons hot sauce Directions: 1. Toast bread in a toaster. Roughly chop the chicken. Cut the pepper into 1 inch sticks. 2. Cover each toast with thin layer of ketchup and hot sauce. Season with pepper and sprinkle with oregano. 3. Decorate each with chicken, bell pepper and olives. 4. Place cheese slice on the top of each pizza.??? 5. Place pizzas in the microwave oven and cook until the cheese melts. |

| Veggie Lover's Pizza ![]() Ingredients: 1 tbsp oil 1 tsp crushed red chillies 1 large onion, chopped 1 cup tomatoes, sliced 1 large green pepper, de-seeded and chopped 1 medium capsicum, chopped 1 cup broccoli/cauliflower florets 1/2 cup olives 1 cup mozzarella cheese 1 cup pizza sauce 2 thin pizza crusts Directions: 1. Preheat oven to 375 degrees F. 2. In a large non-stick pan, heat oil and add crushed red chillies, onion, pepper and capsicum and sauté them for five minutes or until they begin to soften. 3. Toss in the broccoli or cauliflower florets and olives, and cook for a couple of minutes. Remove from heat. 4. Place the pizza crusts on two non-stick baking trays and evenly sprinkle half the cheese. 5. Spread the pizza sauce over them and then arrange the sautéed vegetables and tomato slices on the crusts. 6. Sprinkle the rest of the mozzarella cheese on top and bake for 15 minutes or until the edges of the crust are golden brown. 7. Serve immediately or reheat in the microwave to serve. |

| Strawberry Lemonade Serves: 6 Prep. Time: 10 minutes Ingredients: 3/4 cup lemon juice 5.50 cups water 1.50 cups sugar 3.00 cups strawberries 0.00 to garnish - mint, fresh few sprigs Directions: 1. Working in batches, Place lime juice, water, sugar and strawberries in blender and blend to a smooth puree. 2. Force the puree through a fine sieve, pressing hard on the solids. Stir and add additional sugar, if desire. Stir to dissolve the sugar. 3. Pour the lemonade into tall glasses, filled with crushed ice. Garnish with mint spring. |

| Vanila Milk Shake Serves: 2 Prep. Time: 10 minutes Ingredients: 1 cup milk, chilled 2 1\2 cups vanilla ice cream 1 teaspoon vanilla essence Directions: 1. Place the vanilla ice cream and extract into a blender. With the motor running, add the milk, until it is thoroughly mixed. 2. Get the glasses from the freezer, put them on the serving tray. 3. Pour the shake into the glasses with a straw. 4. Garnish with grated chocolate and maraschino cherries. if desired. Serve immediately. |

| Jaggery (gurr) Sherbet Ingredients: A medium piece of jaggery 1 glass of water 1/2 tsp lemon juice Ice cubes, as required Directions: 1. Soak the jaggery in water. 2. When it is dissolved, sieve and mix in lemon juice and ice cubes, and serve. |

| Banana Milk Shake Serves: 4 Prep. Time: 10 minutes Ingredients: 2 - ripe bananas, peel and sliced 1\2 teaspoon vanilla extract 2 cup milk, chilled 3 cups vanilla ice cream Directions: 1. Put bananas, vanilla extract and 1 cup milk into a blender and blend until smooth. Add vanilla ice cream to the banana milk. With the motor running, add remaining milk and blend, until it is thoroughly mixed. 2. Pour shake into the glasses with a straw. Serve immediately. |

| Cold Coffee Serves: 2 Prep. Time: 10 minutes Ingredients: 1 cup milk 1 tablespoon coffee instant 1 1\2 cups chocolate For garnish : strawberries. Directions: 1. Combine milk and instant coffee beverage mix in blender, blend until dissolved. 2. Add ice cream and blend until smooth. 3. Garnish with grated chocolate and cherries or strawberries. |

| Chicken Tikka Kabab Description: Boneless chicken chunks roasted with spices make a delicious cocktail snack Category: Grills / BBQ Prep. Time: 3 ½ hours Ingredients: Chicken, deboned 800 gm Cooking oil 60 ml/4 tbs Cumin (jeera) powder 2.5 gm/ ½ tsp Garlic paste 45 gm/3 tbs Ginger paste 45 gm/3 tbs Gram flour (besan) 20 gm/4 tsp Green cardamom powder 2.5 gm/ ½ tsp Lemon juice 60 ml/4 tbs Mace (javitri) powder 2.5 gm/ ½ tsp Oil for basting Red chilli powder 5 gm/1 tsp Salt to taste Turmeric powder 2.5 gm/ ½ tsp White pepper powder 2.5 gm/ ½ tsp Yogurt 45 gm/3 tbs Directions: 1. Cut chicken into 1 inch cubes. Whisk yogurt and mix in all other ingredients. Marinade chicken pieces in it and keep aside for 3 hours. Skewer each piece an inch apart and roast in a tandoor for 3 minutes. Brush with oil and roast again in a preheated oven at 350 ºF for 10 minutes, basting at least twice. |

| Chaat Papri Category: Snacks Serves: 4 Prep. Time: 30 min Ingredients: Refined flour (maida) 1 cup / 100 gm Semolina (suji) 1 tbsp / 10 gm Salt ½ tbsp Baking powder a pinch Vegetable oil ¾ cup / 150 ml\ Vegetable oil for frying To serve Potatoes, boiled, cubed ½ cup Chickpeas (kabuli chana), boiled ½ cup Tamarind chutney ¾ cup / 150 gm Mint chutney 4 tbsp / 60 gm Yoghurt (dahi), beaten 1 cup / 180 gm Chaat masala to taste Directions: 1. Sift the refined flour, semolina, salt, and baking powder together. Add hot oil and mix Well. Knead with enough water to make a smooth dough. Divide the dough equally into tiny balls. Roll each out into a very thin disc, 1½ "in diameter. Perforate each with a fork so that it doesn't puff out while frying. Keep aside for 30 minutes, uncovered. 2. Heat the oil in a wok (kadhai); deep-fry the discs on a medium flame till crisp and golden. Remove with a slotted spoon and drain the excess oil on absorbent kitchen paper towels. To serve, arrange the fried discs (papri) on a plate; spread the potatoes, chickpeas, tamarind and mint chutneys, yoghurt and chaat masala to taste. |
