Fish = Whole (Diagonal Cuts on both sides) 3 kgs
Onion = 1 (Another onions for baking)
Lemon Grass = 1 stick
Mushrooms, Broccoli, baby tomatoes, red chilies, for baking (I used Potatoes and Onions instead of these veggies)
Butter = 1 Tbsp
Lemon Juice = Half Cup
Red chili flakes = 2 tbsp
Balsamic Vinegar = 3 ˝ Tbsp
Olive Oil
Tomatoes for Salsa = 5
SALSA = ( For Stuffing )
1- Add 1 Tbsp butter and d ash of olive oil in pan.
2- Add onions and lemon grass. Sauté
3- Add tomatoes.
4- Squeeze lemon juice
5- Season it with Black pepper
(I used ready made salsa as u can see in pics )
Topping =
1- Grind Garlic cloves (a little less than ˝ Cup )
2- Add lemon juice , black pepper , balsamic vinegar, olive oil, and mix well.
Baking Preparation =
1- Grease baking dish with olive oil or butter.
2- Sprinkle Topping on fish. Insert in cuts and inside fish.
3- Stuff fish with Salsa
4- Change side and repeat the procedure i-e cover fish with topping.
5- Spread veggies on sides and sprinkle salt and black pepper on them.
6- Pour butter on different places .
7- Cover Fish with foil. Bake for 20 minutes with foil and let veggies cook in its juices. Remove foil after 20 minutes and let it bake like tht.
Bake at 180 degrees Celci. For 35 minutes .
Note =(Above mentioned ingredients r used in the original recipe . I gace Mexican Fish a Lahori Touch by using following ingredients .
Ajwaeen , Qasoori Methi , Cinamon powder, cloves, black pepper, Taiz Paat patta, Makayee kaa aata , channa daaal and wheat Grind them together. Make Paste with Lemon Juice instead of Balsamic vinegar.)
